Utah has an unusual State Flower, the Sego Lily. It is quite beautiful and unlike many other Lilies is edible. In fact during the period covering 1840-1850 there was a famine in Utah, and many families relied on the bulb of the Sego Lily for food. So when the legislature of Utah asked their school children to vote on a State Flower, the Sego Lily won by a landslide. 

It is a small plant that grows along the ground, and only reaches 6-8 inches tall, and is usually White, but can be Lavender. It has Yellow stamens and the center coming up from the bulb may be Yellow too, but it is sometimes a darker color like Purple. It blooms from May to July.
